OUR FOOD PILOSOPHY

At Dolphin Quest, food is woven into the heart of our home. Our meals are created using ingredients grown on our land or sourced from local farmers, fishermen, and our community. We believe food is medicine — a source of nourishment, connection, and vitality.

The soul of our kitchen comes from our founder, Raymond Klochko, whose deep love for cooking shaped the culinary identity of the lodge. His family recipes, passion for fresh ingredients, and curiosity for global flavors continue to inspire the creative dishes we prepare today. That foundation, combined with health-forward influences and Costa Rican traditions, has grown into a food philosophy grounded in organic growing, diverse whole foods, and sustainable, selective fishing.

  • Our farm-to-table experience begins right here on the land. Dolphin Quest has spent over 30 years cultivating gardens using permaculture and regenerative agriculture principles. Today, we grow more than 300+ plants, fruit trees, herbs, and vegetables that supply our kitchen daily.

    We believe true health starts with what we eat — and at Dolphin Quest, that starts with the soil beneath our feet. Thanks to the dedication of our staff, work volunteers, and friends who have contributed over the decades, our property thrives with abundance.

    We focus on growing organically and supporting our crops with natural methods rather than chemical pesticides. Living in the jungle means adapting to the rhythms of weather, wildlife, and nature — and still, we continue to prioritize nurturing the land and adapting as we go.

  • The Golfo Dulce is one of the world’s most unique marine ecosystems — and protecting it is part of our responsibility. That’s why Dolphin Quest practices and supports selective fishing, a method focused on catching only specific species and in small quantities to protect biodiversity.

    This contrasts sharply with commercial fishing, which often removes large volumes of fish at once and results in significant bycatch — the accidental capture of non-target species such as turtles, smaller fish, dolphins, and other marine life. Bycatch disrupts the ecosystem and threatens species survival, making selective fishing a vital alternative.

    Many of the large fish commonly eaten in our lodge, such as mahi mahi (dorado) and yellowfin tuna, are typically caught outside of the Golfo Dulce in larger ocean waters.

    Freshly caught by our guests,
    Caught sustainably by our staff, or
    Sourced from trusted local fishermen

    Being steps from the ocean, guests can fish right from the shore, kayak, or boat — or book a deep-sea fishing trip. Bringing your own catch back to the kitchen is one of the most loved experiences here, where we prepare it into a vibrant, flavorful, fresh meal.

    We believe in taking only what is needed to maintain the delicate balance of the Golfo Dulce and ensure the ocean continues to thrive.
